Making the Shakshuka

| Eskort Bacon Grillers |
| 1 tin | tomato puree |
| ½ C | leeks |
| 1 | lemon |
| 1 t | nutmeg |
| 4 | eggs |
|
| toasted bread |
|
| olive oil for cooking |
|
| salt and pepper to taste |
| ¼ C | sour cream for serving |
Method:
Preheat the oven to 180°C.
Heat a frying pan over a moderate heat.
Fry the leeks and nutmeg in the olive oil for 3 min.
Add the zest and juice of the lemon and add the tomato puree.
Simmer until it starts to bubble. Add the eggs and pop into the oven for 7 minutes.
Fry the bacon grillers separately in a frying pan over a moderate heat.
Serve
Serve the shakshuka with the bacon grillers and top with the sour cream and garnish with fresh herbs.
