Pork Broth

| 1 kg | Pork Trotters |
| 2 | large onions, quartered (keep the skin on) |
| 2 | carrots, grated |
| 1 bunch | celery, chopped |
| 750 ml (3 C) | leeks, chopped |
| 1 | bay leaf |
| 3 cloves | garlic, crushed |
| 3 L (12 C) | cold water |
Method:
Preheat oven to 190°C.
Place all the ingredients (except the water) on an oven tray and roast for 20 minutes.
Add the roasted trotters and vegetables to a large pot and add water. Simmer for 40 minutes.
Clear the broth from all the solids.
Storage
Refrigerate in an airtight container for no longer than 5 days.
Broth can be frozen for 2 to 3 months.
Creamy Spinach & Kale Bacon Broth
This creamy broth is loaded with spinach, kale and delicious bacon! What a perfect way to get those healthy veggies into your diet.

| 200 g | Eskort Diced Bacon |
| 1 | leek, chopped |
| 15 ml (1 T) | thyme, chopped |
| 750 ml (3 C) | pork broth (made with recipe as above) |
| 500 ml (2 C) | baby spinach |
| 500 ml (2 C) | kale |
| 250 ml (1 C) | coconut cream |
|
| salt and pepper |
|
| oil for cooking |
Method:
Preheat oven to 190°C.
Place kale on an oven tray and drizzle with oil. Roast for 10 minutes.
In a pot over moderate heat, fry leeks, thyme and bacon until the bacon until crispy.
Add broth and coconut cream. Simmer for 5 minutes.
Add baby spinach and season with salt and pepper.
Serve
Serve in a bowl and top with kale.
