375 g | Eskort Breakfast Sausages |
4 slices | toasted rye bread |
4 | poached eggs |
250 ml (1 C) | fresh edamame beans |
| salt & pepper to taste |
Pickled Red Onions |
|
1 | red onion, thinly sliced |
60 ml (½ C) | spirit vinegar |
15 ml (1 T) | sugar |
Butter Bean Hummus |
|
410 g (1 can) | butter beans, drained |
1 clove | garlic, roasted |
60 ml (½ C) | avo oil |
1 | lemon, juice |
| salt and pepper to taste |
Method:
Preheat oven to 180°C.
Place sausage on a greased baking tray and bake for 15 minutes.
Pickled Red Onion
Heat vinegar and add sugar.
Pour over sliced red onion and set aside
Butter Bean Hummus
Place all ingredients in a food processor and blend until smooth.
Serve
Spread hummus on toast then place sausages and edamame beans on top.
Finish off with poached eggs and pickled red onions.
