375 g | Eskort Peppadew® Pepper & Feta Pork Sausages |
200 g | vine or cherry tomatoes |
125 ml (½ C) | red onions, chopped |
15 ml (1 T) | thyme |
30 ml (2 T) | cooking oil |
Batter |

560 ml (2¼ C) | flour |
3 ml (½ t) | salt |
2 | eggs |
187 ml (¾ C) | milk |
Method:
Preheat oven to 200°C.
Place sausages, tomatoes, onions, thyme and oil in an oven dish and bake for 15 minutes.
While the sausages are in the oven, combine flour and salt in a mixing bowl and make a well in the middle.
Break eggs into the well and mix with an electric mixer until smooth.
Add milk and mix well.
Pour the batter over the cooked sausages and bake for another 20 minutes.
Serve
Serve with a fresh salad and sour cream.
