500 g | Eskort Smoked Russians, sliced |
300 g | gnocchi, uncooked |
500 g | jam tomatoes, halved |
65 ml (¼ C) | olive oil |
2 cloves | garlic, chopped |
15 ml (1 T) | brown sugar |
30 ml (2 T) | red wine vinegar |
1 | lemon, zest and juice |
5 g | fresh oregano |
5 g | fresh basil |
| salt and pepper for seasoning |
Method:
Gnocchi
Bring a large pot of water to a rolling boil and add a large pinch of salt.
Cook the gnocchi according to the package instructions.
Smoked Russians and Marinated Tomatoes
While the gnocchi is cooking, place a large frying pan over a moderate heat.
Add olive oil and fry the tomatoes until the skins loosen.
Reduce the heat, add the sliced Russians and chopped garlic, and stir.
Add the sugar and red wine vinegar, and cook, stirring occasionally, until the sugar dissolves.
Remove the pan from the heat, add the lemon juice, oregano and basil, and stir to combine all the ingredients.
Serve:
Plate a portion of gnocchi and spoon the smoked Russians and marinated tomatoes over it. Garnish with fresh herbs.
