Pap |

750 g | maize meal |
1 L | hot water |
5 ml | coarse salt |
15 ml | whole black pepper corns |
Method:
Heat water in a medium sized pot over high heat, add salt and black pepper.
Bring the water to a boil and slowly add the maize meal while stirring with a whisk.
Close with a lid and lower the temperature.
Cook for 10 -15 minutes.

Oven grilled tomatoes and baby cabbage |

500 g | large ripe jam tomatoes |
1 small head | cabbage, cut into eighths |
60 ml | olive oil |
1 | zest and juice |
15 ml | coarse salt |
15 ml | freshly ground black pepper |
Method:
Preheat the oven to 200°C.
Line an oven tray with baking paper.
Cut a cross on top of each tomato, place them and the cabbage on the baking tray.
Drizzle with olive oil, lemon zest and lemon juice.
Season with salt and pepper.
Bake in the oven for 20 minutes.

60 ml | sunflower oil |
2 | green chillies, chopped |
1 bunch | spring onions |
Method and serving:
Place a medium sized saucepan over a high heat, add the oil and fry the Russians for 2 minutes per side.
Serve the pap with Russians and top with tomatoes and cabbage.
Garnish with fresh chilies and spring onions.
