250 ml | flour |
30 g | butter |
250 ml | milk |
5 ml | bicarbonate of soda |
2 | eggs, beaten |
250 ml | apricot jam |
15 ml | lemon juice |
Maple Bacon Glaze: |

250 ml | Eskort Diced Bacon, fried |
60 ml | custard |
30 ml | maple syrup |
Method:
Preheat the oven to 180°C,
Mix the flour and butter together to form a crumbly mixture.
Mix the milk and bicarbonate of soda together and add to the flour along with the remaining ingredients.
Pour batter into 6 enamel mugs about ¾ full. Bake for 30 minutes, or until a cake tester comes out clean.
For the Maple Bacon Glaze:
Fry the bacon until crispy, then add the maple syrup and custard and simmer together for a few minutes.
Serve over the hot malva puddings.
Add extra custard if you like!
